Build up in the radiator system or a plug can cause this. Do a radiator flush (or have a professional do it if you're not interested but it's fairly easy if you read an online HOWTO) to remove the grime and refill with fresh coolant. This solved the problem in my 2003. Check the low coolant level sensor and replace if defective. It is in the side of the radiator.
it looks like a radiator with coolant in! it should be red.

There is a low level sensor in the side of the radiator. They do go bad.
There is a sensor either in the coolant recovery jug or the radiator side tank that is defective.
There is a sensor in the side of the radiator that is most likely defective.
lOW COOLANT OR BAD SENSOR
The low coolant sensor is located in the side of the radiator. It can be unplugged but then how will you know it is low.
Well, the common cause for the light coming on is the radiator is low of coolant. But I assume you have checked the coolant level and it is ok. That being the case more than likely the coolant level sensor is defective and needs replacing. Can also be the problem is in the wiring.
if coolant is ok!! then check coolant sensor.
