Because otherwise you'd be sending the email to the wrong person, or trying to log on to the wrong email account! And needless to say, it wouldn't go very well...
An email may be rejected, or returned as not deliverable, if the email address is wrong. Even if just one character is mistyped, the email will fail to be delivered.

On most email systems, the date associated with the message will be the date sent, at least to those receiving it. I am not sure there is any way that your recipients could see when you started the draft..
Email addresses are not translated; otherwise the email would be sent to the wrong place.
