The Eye of Horus is an ancient Egyptian symbol of protection, royal power and good health.
The organs were removed from the body and put in jarsThe organs were placed in canopic jars. They had the four sons of Horus(Imsety, Hapy, Duamutef, and Qebehsenuef) as the top cap of the jars. The heart was not placed in the canopic jars because the Egyptians thought that it was the controller of the body-as if it was the brain. The internal organs of bodies were removed before mummification and placed in special containers called canopic jars, which were entombed along with the mummy.
They personified and protected the canopic jars; in the beginning only Pharaohs were mummified, the Pharaoh to the Egyptians was the living Horus, the body parts removed were part of Horus' soul, hence "sons".
Horus was the son of osiris.
The Eye of Horus belongs to the god Horus.

I could be wrong, but I don't think they did preserve the organs. They were removed from the corpse and placed im four jars, whose lids were moulded in the shape of the heads of the sons of Horus. The internal organs and brain contain so much water that preservation is a very difficult task.

In the process of mummification certain organs-the liver, the lungs, the stomach, and the intestines-were removed, embalmed separately, and stored in jars. Each of the organs was identified with one of the Four Sons of Horus: the liver with Imsety (man's head), the lungs with Hapy (baboon's head), the stomach with Duamutef (jackal's head), and the intestines with Qebehsenuef (falcon's head).

Horus, the god, married Hahtaor. The goddess of the Sun.
Horus was a subset of the god Ra. Born of Isis, sometimes referred to as a virgin, Horus resembles many of the same story characteristics as that of Jesus in the Christian faith. Horus was the god of many things (clother of the naked, feeder of the poor, etc).
