Refrigeration is important because it keeps the food product or liquid, or whatever really, at a low, constant temperature. It will also keep certain amounts of moisture to a controllable level, unless you store it in a part of the refrigerator that will keep the product in a moist atmosphere. Keeping foods and liquids at a constant low temperature is one of the top commandments to storing foods for long periods as it keeps the bacteria from gaining a foothold. It keeps moisture at a constant maintanable level as most refrigerators are dark unless door is opened. It also keeps light away from your stored foods and liquids. Heat, light, and moisture are the three main building blocks that bacteria needs to gain a foot hold and reproduce, making your edibles very much so inedible!

While this depends on what food specifically, food given to quick spoilage such as dairy and meat products require refrigeration to prevent harmful bacteria from thriving, thus spoiling it. Equally important is the cleanliness of the refrigerator and storage method.

As for fruit and vegetables, the cold and dry conditions allow them to remain fresh for essentially similar reasons. There are certain exceptions, however. For example, unripened mangoes and bananas are often stored at room temperature to allow ripening, as they are tropical fruit. However, storing them in a fridge still extends their lifespan, especially when unripe.

To maintain freshness and taste. Cooked foods need to be covered to prevent them from drying out and from food odors spreading to raw vegetables. Foods must be stored at the proper temperature, cold enough to maintain freshness but not cold enough to freeze.
