Grouping them all together allows ease of notation and reflects the change that can occur. Because the amounts produced in a given reaction vary widely depending on the circumstances, the proportion of each oxide to the others can be quite different. For example, it may be 1NO: 2NO2 in one situation, but 3NO: 2NO2 in a different one, and may not even involve one at all (e.g. all NO and no NO2).
