The cello and all instruments of the violin family are not varnished or colored because the left hand is constantly moving up and down it's length. The wood is sealed but the left hand rubs against the neck adding oils from the hand from constant use. This keeps the area smooth and relatively friction free to allow the hand to move over the area easily.
