Stars emit a mixture of particles called the solar wind. This wind blows bits of the comet off, forming a tail. The solar wind is always blowing away from the sun, likewise does the tail of a comet point away from the sun.

Comets have two tails. The dust particle tail will always trail behind the comet, and the more gaseous tail will always be away from the sun, blown outwards by the solar wind which comes from the sun.
