Iron and magnesium are the two common minerals in basalt. The rock is poor in silica though.

The subsoil becomes rich in minerals as minerals from the topsoil leach down into the subsoil.
Volcanic glasses have no crystalline structure, and technically no minerals.
No minerals make up true volcanic glass, as the crystalline structure of minerals did not have time to form before the lava hardened. A mineral must have a crystalline structure.

Water would be full of minerals. Also anything that contains water would be rich in minerals. For example orange juice. Fish is another good example of food that would be rich in minerals.
