Yeast makes the raw dough rise before cooking. In pretzels it does the same job. That's what makes them puffy.
Pretzels are made with yeast dough. Cake yeast could be substituted for dry yeast, or one might make a "sponge" or sour dough starter which uses wild yeasts from the air. But some sort of yeast must be used in order to make actual pretzels.

Pretzel dough is a yeast dough which requires sufficient time to rise, rest, boil and bake. Speeding the process can result in poor quality pretzels.
One may make their own pretzels by combining 1 tablespoons of sugar, 2 1/2 teaspoons of dried active yeast, 3-4 cups of all purpose flour and 1 large egg mix together, roll out in to shaped pretzels on a greased baking tray and then baking at 425 for approximately 12 minutes. Once the pretzels have been left to cool one may simply cover them or dip them in melted white chocolate.
you get pretzels by eating them. tada!
