Is it a 2.3l ? guage error is common on these! check with exteral temp. guage to verify actual temp. If low change thermostat, but be careful not to install it incorrectly. [uspside down]

That depends on the thermostat. If it's a 185 thermostat, the engine should run at 185. If it's running too hot, check the thermostat, radiator and water pump. If it's running too cold, replace the thermostat.

check the cold start valve is working and not stuck usually take it out and use carb cleaner to clean it of all the carbon that builds up failing that the fuel mixture is incorrect. if its too lean theres not enough fuel to richen the mixture to aid a cold start, if its too rich it "chokes" the engine both these can lead to poor cold start and running but i would start with the cold fuel valve (solenoid)
