Cartilage is a softer structure that is generally not fossilised, but it can in fact be found on some fossils. I dug around for some info, and found that a mosasaur was found with at least some of its cartilage fossilised.

I'm sorry I can't give more information, I've been looking for a solid answer myself, looking for proof of our ancestor's nose shapes. There's not much out there for whatever reason.
