Most building and joinery materials are inherently rectagular as manufactured. Thus this shape is the simplest to construct. Tables that are circles or elipses result in material wasted.

Depends on the type of piano I guess. Most keyboards are rectangle shaped, there are rectangle/square shaped grand pianos but they are not common, most uprights are rectangle.

Assuming the table is circular and not square or rectangle. C=pi*D So C= 3.1415926535897932384626433832795 * 4 = 12.566370614359172 ft.
You might need the 108" and it probably would not fit in your dining room. I do not know if the 72" would even fit there, or if it would be large enough. You might be better with a rectangle or oblong table.
