Nitrogen is the basic food of green plants - their "growth hormone" almost. A foliage plant not getting enough nitrogen will be spindly, yellow and sickly. Plentyh of nitrogen - lush green growth. But the N must be balanced with Potassium and Phosphorus for best growth.

Nitrates are needed as a source of protein (to make enzymes needed for the plant's life processes, for growth, etc).

The root hairs take up nitrate ions by active transport. In most plants, these nitrate ions are converted in the roots, first into nitrites (NO2-), then to ammonia, and then to amino acids which are then transported to other parts of the plant via the xylem. In other plants species, the nitrate ions are taken to the leaves via the xylem before undergoing the conversion process.

Most of the nitrogen ends up as part of protein molecules in the plant, especially in seeds and storage tissues.
