They are not familiar with Pork and Meat because the deserts don't have much animals and vegetation, and also if they were vegetation there would be many animals living in the deserts.

People who live in or around deserts are usually uneducated in a lot of western meat because they come from farmyard animals, which are almost impossible to raise when there is no grassy areas.
