Proteins are not hereditary material because of many reasons. Few of them are:

No Uniformity in the structure: For a molecule to be carrier of heredity, It is important that its structure should remain universal. While, there is a lot of structural variation in the proteins, the structure of DNA is fairly same.

The difference of the protein contents of the cells: Different cells in the same organism have different proteins and at different times in the same cells, the protein content varies. The DNA content of the all the cells in an organism are same irrespective of their location in body and time.
