Pickle commonly refers to a cucumber that has fermented in brine or vinegar for a period of time. (Many foods are able to be pickled, but cucumber is the most common use of the word Pickle) The process itself is called "Pickling" and has roots in a German word pökel, which was a type of sauce normally served with meat or fowl. The word Pickle comes from the Dutch word Pekel which means brine. Pickling is a form of food preservation, much like sauce, perserves, and smoked and salted meats. It is not known who first coined the phrase or where the process specifically originates, but the earliest use of "cucumber preserved in pickle" is believed to come from 1440 A.D. in central European countries (the Germans, Dutch, and French.)
