Because bacteria that causes food poisoning multiply much faster in a warm place, so if you have undercooked something it could have more bacteria than before. High heat kills most bacteria in our food so food that is cooked correctly is much safer. Our bodies can cope with low amounts of bacteria as our stomach contains hydroclhoric acid and this kills some of the germs too.

Nutrients are destroyed by overcooking.

Taste deteriorates when food is overcooked.

There are beneficial enzymes in food which can deform or get destroyed at very high temperatures. These enzymes may be helpful for digestion and so the nutrient value is lost. As a result, the colour of the food changes.

Plus, It doesn't taste good!
