Example: water boils (vaporizes) at 100°C at atmospheric pressure (101.3 kPa, 14.7psi, or 1 bar), but at much lower temperature when pressure is lower, and much higher temperature at higher pressure. In the case of water evaporating from an open container at room temperature and normal atmospheric pressure, the evaporation only occurs if the partial pressure of atmospheric water vapor (relative humidity) is below the vapor pressure of the liquid water. If humidity is low enough; each gram (milliliter, or cm³) of evaporating water absorbs 540 calories from the liquid it leaves. The process is exploited as "Evaporative Coolong".

The kinetic energy increases because as liquids becomes gases and evaporate, the molecules move faster. Since kinetic energy is the energy of motion, that means there is more energy as the molecules move faster.
