Jesus' trial was set before the Roman court and the Jews were asking for the Romans to crucify Jesus, a punishment given only to the worst of the worst. The Jews decided to argue that his crime was that he was trying to start a rebellion and take over Rome. This wasn't true and Pontius Pilate could see that it wasn't true and so did not want to crucify him. The only reason that he gave in was because he realized that if he didn't the Jews trying to crucify him would probably create a massive rebellion instead. In the interests of the nation, he decided that killing one to stop many deaths was best, so Jesus was not killed for any real crime and so there was nothing that he could do.

Actually a court of appeals cannot decide that. A court of appeals can only decide whether or not the trial court correctly followed procedures and existing legal precedence. It is entirely possible for procedures and legal precedence to be completely unfair (they have been many times) but if the trial court properly followed them, the court of appeals must support the trial court's decision. If the court of appeals decides that the trial court failed to follow procedures and/or existing legal precedent, then the case must be retried in a trial court.
A fair public trial is essentially when a person is treated and believed to be innocent until they are proven guilty in a trial that is void of prejudice, bias, and unfair treatment.

According to Acts of the Apostles, Paul spent his childhood in Jerusalem, learning under the famous Gamaliel I, so, on that evidence, he could have been at the trial of Jesus. However, scholars say that there is no evidence in any of the epistles that he was in Jerusalem during the lifetime of Jesus, in which case he could not have been present at the trial. Certainly, Paul never mentions having seen Jesus before his crucifixion. The gospels do not mention John as in attendance at the trial of Jesus. .
