It's actually an arras that Polonius hides behind.
Both times Polonius hides behind an arras, he does so to eavesdrop on what Hamlet says to somebody else. First, Polonius hides to listen to Hamlet talk to Ophelia, then later, he hides to listen to Hamlet talk to Gertrude.
Polonius hides behind the Queen's curtain to eavesdrop on a conversation between Hamlet and Gertrude, hoping to gain insight into Hamlet's erratic behavior. He believes that understanding Hamlet's motives will help him protect the royal family and maintain his influence at court. This act of spying ultimately leads to his demise, as he is mistakenly killed by Hamlet, highlighting the dangers of deception and intrusion in personal matters.
Basically, he knows that Hamlet usually walks alone through the lobby of the castle, and, at such a time, they (Polonius and Claudius) could hide behind an arras (a curtain or wall hanging) while Ophelia confronts Hamlet, allowing them to see for themselves whether Hamlet's madness really emanates from his love for her.
Prior to Hamlet's entry into Gertrude's (Hamlet's mother) chamber, Polonius is having a discussion with the queen. As Hamlet enters his mother's room rather abruptly, Polonius chooses to hide behind a tapestry on the wall. When Hamlet begins to threaten his mother, Polonius believes Hamlet is trying to kill her, and so Polonius cries for help. Hamlet "thinking it was King Claudius" (it is unclear as to whether he actually believes its the King or not), stabs Polonius through the tapestry, killing him. As he dies he lets out his iconically obvious line "Oh, I am slain".
Polonius's characteristic of being overly curious and meddlesome ultimately led to his death. His inclination to spy on others, particularly his decision to hide behind the arras in Gertrude's chamber, made him vulnerable. This act of eavesdropping not only revealed his lack of discretion but also resulted in him being mistakenly killed by Hamlet, showcasing the dangers of his intrusive behavior.
Polonius may actually care about his daughter, Ophelia but it's not very evident in his actions. He clearly is more concerned with his own personal reputation than his 2 children, Laertes and Ophelia.

Oh, dude, a hink-pink for a child playing hide and seek is like... "mini vanishing act." It's when a kid disappears into thin air behind a tiny bush and you're like, "Where did they go?" But don't worry, they're probably just hiding behind a curtain giggling at your terrible seeking skills.
