By whom? - Some books in The Bible are disputed, in the sense that some religious groups consider them to be Holy Scripture, others not. It is not always clear why different Christian denominations (or non-Christians, for that matter) decide to include one book of the Bible in the canon, and not another one; this may just have been a historical decision, made by a group of religious leaders. In any case, the corresponding Wikipedia article lists some details about the history of the Book of Enoch, if you want to research a bit more.

The Arch Angel Uriel is not mentioned in the Protestant Bible. He is mentioned in the Second Book of Esdras and also the Book of Enoch.
I believe he quoted from the Book of Enoch, which is not in the KJV Bible. But was a relevant Book in Jesus' time.
The Bible doesn't describe Enoch as ever dying, but simply being "taken" by God. This event, however, is listed as happening before Methuselah's death.
