The plains were covered with long grass and grass typically grows in sod. When the sod is plowed it leaves large clumps that have to be broken up prior to planting anything. Thus "Sodbusters".

As a longtime grassland, the Great Plains had accumulated deep sod. In order to plant crops, it was necessary to break the sod by cutting deep with a plow. Getting the sod to where it could be useful for a farm got called "busting" it, so the pioneers who settled there and tried to farm got called "sodbusters".
