Because certain people were not allowed in based on their background. Also, they wanted to be more American when they came.
Because the officials could not spell the names of the immigrants.
Most families that changed their names kept some semblance of the old family name. For example Fabinowicz could have become Fabian. If you can figure out the real family name and if they came to America from Prussia, they probably came through Ellis Island. Ellis Island kept very good records of the immigrants. They have a very goos website ti assist you with your search.
No, the name "Johnston" is not Italian since it is English. Many Italians who came to the United States as immigrants in the early 1900's did have their names changed at Ellis Island to sound "more American" so this does not preclude someone with this last name being of Italian origin.

FALSE! When prospective immigrants arrived at a European port to take a ship to the United States, the shipping companies were required by U.S. law to prepare a complete list of all the passengers. The employees of the shipping companies wrote down whatever name the immigrants gave them, and usually there were employees who spoke the languages of the immigrants (Polish, German, Italian, Yiddish) because the shipping company needed to be able to tell the immigrants where to go and what to do. The names on the lists of passengers prepared in Europe were the names that the immigration agents on Ellis Island and other immigration centers used.

Ellis Island has had several names. The native Americans called it Gull Island and the Dutch/English colonist called it Oyster Island. It has been called Dyre, Bucking, and Anderson Island. Samuel Ellis bought it in 1770 . The Federal government purchased the island from New York state in 1808 and built a fort in it. The fort at Ellis island was named Ft. Gibson in honor of a brave office killed in the War of 1812.
