A number of factors could cause banana bread to fall, but the most likely is uneven heat in the oven. Use a baking thermometer to determine whether the oven is holding an even temperature for at least an hour. Other problems could be forgetting or inaccurate measuring of baking powder/baking soda, or failure to use buttermilk, lemon juice, or other acid if called for.
Don't over mix! Fold in the ingredients. If you beat the ingredients too much, you are guaranteed rubbery banana bread.
