well let me ask you a couple questions and you will see where im going with this...
a.) is the car parked on an incline/ decline?
b.) how much coolant is in the bottle?
it could be 2 things, either there is not enough coolant in the bottle that when you drive, or when parked on a hill that the coolant isn't regestering in the sensor. it could also be a faulty sensor (ive had to replace mine due to this same problem on a 2000 getta). so those are the two things you might want to check before you go and deal with a shop and pay 100+ bucks for them to tell you what im telling you, and then more money for labor..its a quick replacement if you get the sensor either online or at a deal (car-stuff.com or even autopartswarehouse.com has helped me on few projects so check there).
Could it be that you are just low on coolant?
When mine flashes it means that the coolant level is low.

Hello, I have been trying to track this down as well, seeing as how i dont have a manual for my Jetta. I belive this light either indicates low temperature of the coolant or low level of the coolant. I hopefully will be able to find a whole list of what all these lights mean at some point in time. If i can find it i will returen and post.
Burned out exterior light bulb.
Coolant system warning light. It should go off when you add coolant.

Coolant level warning light. It is either your coolant warning light, wiper fluid warning light or low tire pressure warning light.
It's a warning sign that you are low on coolant.
