They would need to show to a ruler that they have achieved something very high. The ruler would then take the soon to be knight's sword, make the soon to be knight get on one knee, and the ruler would pat the sword on his shoulders and give him a title. Then the one that showed great ability would become a knight.
Carry the knight's equipament, aid the knight in daily life and in battle too if needed, basiclly a serveant, he had to learn all he could from the knight, cause one day he would become a knight himself.
A knights apprentice is called a squire and they learn from him. They would have to follow the knight into battle and dreess him for battle. They would hold the knights extra weapons. At the age of 21 the become a knight and then they take a squire themself and it goes on and on.
