Because sodium (salt) attracts the moisture in a substance or material causing it to become dry. Examples would be why beef jerky is so tough, because salt is used to keep it from rotting. Or when people who were to drink salt water, they would become so dehydrated. The salt absorbs the water causing dehydration. The Pork Chop would become tough and dry when putting salt on it because the salt absorbs the water within the meat.
