Because space is an extreme and hostile environment to humans. We have to bring everything we need to survive into space with us; breathable air, pressure comparable to 1 atmosphere, communication systems, mobility, ect. All this (especially atmospheric pressure) adds up a thick cumbersome suit needed to survive in space.

Space is a dangerous place.
There's no gravity for a start, so your coffee would just float out of your cup. Of course you'd have difficulty putting on your socks in the morning and well just going to the toilet could be an adventure all it's own.
We humans are adapted to our gravity. Our bones support our fleshy bodies and allow us to stand upright in a gravity environment. But if there is no gravity our bodies start to adapt to the new conditions. The bones in your body undergo a process called de-calcification. Put simply they start to become brittle and loose their strength.
Then you have the cosmic radiation to deal with. This nasty problem stems from our sun. It not only radiates heat, but all other manner of radio waves. Some of these radiations can cause cancer and alter or damage your genes (and we're not talking your blue jeans here!).
On Earth we're protected by the magnetosphere, that's the magnetic polarisation of the iron core of our planet. You know, the thing that makes a compass work and point north. This magnetic field repels most of the cosmic radiation just like a Science Fiction force field... only its not science fiction, it's science fact! Take a few seconds to look up photos of the aurora Borealis on a search engine. See that green blue glow? That's the Earth's magnetic force field doing it's thing and keeping us safe here on the ground.
But back up in space there isn't a force field to protect our fleshy bodies from having our DNA mangled by the Sun's radiation. prolonged exposure to Cosmic radiation can make your sick really quick.
Did I mention the lack of atmosphere? There's nothing in space. Well ok not much. It's a vacuum, literally Space sucks! So without a space suit to protect you and provide you with air at the right pressure, you'd die...
...horribly. No! I mean it really horribly!
We are not just talking about not being able to breathe here, were talking about your blood coiling instantly, our eyes bulging out of the sockets and your brain exploding!
There's two problems here.
Problem A
Humans were never designed to exist in a vacuum. The density and internal pressures of our bodies are set up to prevent us either imploding (when under high pressure) or exploding if we are at low pressure. Put us in space without a suit and the internal pressure in your body will make it go bang, big style! (Ever tried cooking and egg in a microwave oven without cracking the top? If you have you know what I mean!).
Problem B
The boiling point of liquids is dependant on the air (or other gas) pressure around it. For instance the boiling point of water is 100 °C (212 °F) at standard pressure (Sea level). But if you try to boil your kettle on Mount Everest where the air is thinner and subject to less pressure, it will boil at 71 °C (159.8 °F).
Now I don't know what the boiling point of blood is, but I do know that in space with zero pressure liquids vaporise (that's boil to you)... instantly.
...and I didn't even get into the dangers of re-entry or getting marooned in space with no way home.
So there you have it. Space is not a nice place for squishy humans. So next time you see an astronaut crew launch into space just think how much risk those people are taking.
