There are as many reasons as there are people doing it.
Some do it for purely altruistic reasons.
Some for the kudos it can give.
Some because they are being paid to do so.
Some have no choice.
Many large organisations do it for the tax benefits they gain.
All of the above are reasons why people, organisations and governments aid with charity work. Perhaps some are more noble than others but they all assist in some way.
To volunteer for a charity in Africa, one would first have to find a charity that works in Africa. Signing up with the charity, and specifically for overseas work, would be how one would gain a placement with the charity overseas.
