There are several things that you may be tasting. without more info I can only postulate. The most obvious is blood, but I would think that most people would recognize that. Next, the tooth was probably infected and it may be some time before the body clears out all the bacteria and it's byproducts. Third, the dentist may have given you a medication that has a flavor, ie steroids can leave a metallic taste in the mouth. Four, it is possible that an upper (maxillary) extraction can lead to a small hole between the mouth and the sinus that allows drainage. There are other possibilitys, but these are all common ones that I have seen.
