Why write the constitution?

Because then Democracy would cease to exist. The Constitution sets up foundations that govern how certain political processes should work, and helps keep power balanced between the individual and the government. It prevents unwanted forms of government from rising, such as Fascists, or Communists, that would deny people of their naturally granted human rights. The Constitution's purpose is to create harmonious existence for every human being under its rule.
