Fitment depends on the width AND offset. 18x8 +40 will fit.

For the 13-14" wheels it apparently seems to be +42mm based on tirerack.com data. However, larger wheel sizes such as 15-17" appear to be +40mm
The bolt circle is 5x115 meaning there ar 5 lugs and the diameter of the circle they sit on around the center of the wheel is 115mm. 96 grand prix's also typically have a wheel offset between +20mm and +40mm. The pattern is five lug bolts in a star pattern

if they don't clear your calipers, just buy some spacers...
You've got to go with a 5 x 110 wheel unless you get an adapter. Probably best to just find a 5 x 110. Offsets have nothing to do with it. To answer any question about offsets, need to know the rim width. If that changes (really, if the rim width increases) it can get (a little) complicated. There is somewhere on the web an offset calculator. Too much positive offset means possible interference with inside stuff like spindles, suspension components, etc.
You will need spacers , atleast 35mm because the oem equipment is 16x7 so you have to include that extra inch.
