The time in which James and his friends such as Sirius Black, Remus Lupin, Peter Pettigrew, etc. is known as the Marauders' period or era since that was the name of their little "crew."
She didn't have to escape from the centaurs in Harry Potter and the Deathly Hallows. They captured her in Harry Potter and the Order of the Phoenix. Dumbledore, upon his return to the school, walked into the forbidden forest unarmed and walked back out with Umbridge in his arms. She was kept in the hospital wing and seemed to be a little insane. She stole away during the night. By Deathly Hallows she seems to have recovered her sanity and regained a position at the ministry.
