If they accept US currency, you will be subject to their exchange rate. Also, obviously you can use your debit/credit cards and your currency will be converted for the transaction (subject to the bank's exchange rate).
Overall, if you have the time, you're better off waiting for a day that has a better than average exchange rate and exchanging whatever money you plan on spending.
