There is an icon for it on the status bar which you can click. You can get to it through the View menu.

It's the 3rd icon when you click the status bar. It's shaped like a bar graph in horizontal form.
Click the network icon and then click Open Network Preferences. Uncheck, "Show WiFi Status in Menu Bar".

The status bar displays information about the menu bar items
Hold down the cntl key and drag the icon to the quick launch bar. This will copy the icon. If you don't hold the cntl key it will move the icon to the quick launch bar.
