I would not take a chance on eating venison that has been frozen for three years in a regular household freezer. I'm assuming it's also wrapped in butcher paper. I think if you defrost it, it will have an odd smell. If you don't want to waste the poor Bambi, I'd bring it back out Into the Woods and leave it for wild carnivores. Do not leave it near houses as it will attract skunks.
