she is probably a christian or a catholic or something or else just good moraled. Don't push her to do what you want her to do. Don't break up with her because of it either. Just give her time. Or ask her to marry you. Then she will hold hands with you. Seriously though, she must be really nice. Also, don't think she doesn't love you. Take it from me, who is the same way. I was brought up to know that you don't get all touchy-feely with a guy until your married, and sometimes if you do hold hands you start to get comfy cozy around them.
