Clean a cut-up chicken and sear it on all sides in a large skillet using 2 tablespoons of a high temperature cooking oil like corn oil or peanut oil.

Cajun Fettuccini Sauce Recipe

Ingredients

  • 1 pound fettuccini noodles, cooked and drained
  • 1 frying chicken, cut up and seared in a skillet on high heat.
  • 1/2 pound raw, peeled shrimp
  • 5 tbsp. butter
  • 1 cup all-purpose flour
  • 1 cup yellow onion, finely chopped
  • 4 garlic cloves, finely chopped
  • 2 8-oz. cans tomato sauce
  • 1 tbsp. Worcestershire sauce
  • 2 cups water
  • 1/4 tsp. ground cloves
  • 1/4 tsp. allspice powder
  • 1 bay leaf
  • 2 tbsp. sugar
  • 1 tbsp. red pepper
  • 1 tsp. thyme
  • 1/2 cup chopped, fresh parsley
  • 3/4 cups green onion, chopped
  • 1 tbsp. salt
  • 1 tsp. black pepper

Directions

  1. In a large skillet, make a roux with flour and butter. Stir it constantly over low heat until golden brown.
  2. Add onion and garlic. Cook until transparent.
  3. Slowly add tomato sauce, Worcestershire sauce and water. Bring to a simmer.
  4. Add cloves, allspice, bay leaf, sugar and red pepper. Stir
  5. Add chicken pieces, thyme and parsley. Cover and cook on low heat for 45 minutes.
  6. Add shrimp, green onion, salt and pepper. Stir.
  7. Cook an additional 5 minutes or until the shrimp turns pink.
  8. Serve over fettuccini noodles.

Cajun fettuccini tastes even better the second day, so make plenty. It's delicious served with a fresh green salad.
