Ingredients
Wash and drain oysters. Roll in cracker crumbs. Lay on a lightly oiled cookie sheet. Melt margarine; add lemon juice. Spoon mixture on top of each oyster. Sprinkle with salt and pepper. Broil 6 to 10 minutes or until browned. Turn oysters; spoon on remaining margarine mixture. Season and complete the broiling. One serving (4 oysters) may be exchanged for 2/3 bread exchange, 2 meats and 2 fat exchanges or 11 grams carbohydrate, 16 grams protein and 17 grams fat. Makes 8 servings.
The exact origin of Oysters Kilpatrick is unknown, but most experts agree that it is originally an Irish dish. Oysters Kilpatrick is grilled or broiled oysters with sauteed bacon and bread crumbs applied over the top. The dish is served with a sauce made of heavy cream and Worcestershire sauce.
The original recipe is still a secret. Oysters Rockefeller consists of oysters on the half-shell that have been topped with various other ingredients, a rich butter sauce, bread crumbs and are then baked or broiled. The dish was named Oysters Rockefeller after John D. Rockefeller, for the intense richness of the sauce. Jules Alciatore developed it in the face of a shortage of French snails, substituting the locally available oysters for snails in 1899.
