A classic recipe can easily be revamped with a few new ingredients. For example, this bruschetta recipe uses peppers instead of the tomato which is traditionally used in bruschetta. This is also an instance of substituting what you like for things that you aren't too fond of. This recipe calls for goat cheese but any cheese can be substituted. Mozzarella, gorgonzola...they would all be great!

Try alternating just one ingredient in a "classic" recipe that you have had a million times—it will bring a fresh twist on the same old, same old!

Bruschetta with Goat Cheese

Ingredients

Olive oil

2 bell peppers (red, yellow or green)

1 tablespoon capers

Fresh basil leaves

Salt

Black pepper

Baguette or Italian Bread

Goat cheese

2 Garlic cloves

Directions

Preheat the oven to 375 degrees F.

1. Heat 2-3 tablespoons of olive oil in a pan over medium-high heat. Add the peppers and cook until soft, about 15 minutes.

2. Add the capers, basil, salt and pepper.

3. Slice the bread into thin slices. Brush the bread lightly with olive oil. Arrange on a sheet pan and toast in the oven until lightly browned about 10 minutes.

4. Slice garlic clove in half. When warm bread comes out of the oven, gently rub the side of the garlic clove on the bread.

5. Top each piece of bread with a helping of the pepper mixture. Place 2 small pieces of goat cheese on top. Return the bread to the oven for about 2 minutes until warmed.
