When you’re setting up a restaurant, you’ll find soon enough that it’s a lot easier to buy a storefront that was already a restaurant in a previous life. When you’re converting an office or a book store or something into a restaurant, you’ll find that you have a lot more setting up to do. But, if you find a place with a great location or a great price, what are you going to do? Sometimes it makes more sense to remodel than it does to buy a restaurant somewhere that doesn’t have much potential or that costs too much to rent.

The walk in freezer is a major issue, here. The freezer can be your biggest asset or a real pain in the neck. The main thing you want to do is make sure that when you buy the freezer, it’s the last one you ever buy. You don’t want to have to replace it in a year or so when it breaks down. Besides being expensive to replace, you also have to consider lost business while you don’t have a freezer and the difficulty of moving it out and moving an old one in.

So if there’s one piece of your kitchen where you should spare no expense, it’s your walk in freezer. It’s really that important. It’s simply not worth the effort to replace if a smarter buy could have simplified the process from the beginning.

Cost alone doesn’t determine value, of course. But, if you want to save money on the freezer, look to save money in terms of size, not in terms of quality. The freezer you buy really should be the very best freezer you can find within the budget you have for your restaurant.

The food is the backbone of your restaurant, and the freezer and coolers are the backbone of your food. It’s true that you don’t get more just by spending more, but if you want to look at the freezer only from a bottom-dollar perspective, you’re going to get what you pay for.
