If you're looking to lose weight, you probably have been told to eat a lot of salads. Salads are generally healthy, but eating the same old salad all the time gets boring after a while and you might be tempted to give up on your diet if you eat too many of them. Making a salad with fresh chicken breasts and spinach leaves can add variety to your diet.
Start by cooking the chicken breasts. Put oil into a grill pan and slice your chicken breasts in half before placing them into the oil. Grill the breasts for three to five minutes on a side. Put foil over the pan while the chicken is grilling to keep moisture in, which adds to the flavor of the meat.
Put the rest of the salad together while you're waiting for the chicken to cook. Start with baby spinach leaves -- you can find these in the pre-made salad aisle in your supermarket's produce section -- and add avocado, feta cheese, semi-dried tomato and olives. If you don't like feta cheese, substitute ricotta cheese. Both of these cheeses are low in fat and high in taste. If any of the ingredients other than the spinach leaves aren't pre-chopped, chop them before putting them into the salad. Put about half the leaves in the bottom of the salad and add the other ingredients, putting the cheese on top.
After the chicken has cooked a few minutes, it's time to season it. Sprinkle black pepper and sea salt generously over the meat. After you season the chicken, remove it from the pan and slice it. The chicken should be golden brown on the outside and white on the inside. If it is still pink, it isn't cooked and needs to be put back in the pan for a few more minutes. Put the chicken on top of the salad and add more spinach leaves on top. The salad shouldn't need any dressing, but feel free to add vinegar if you need extra flavor.
This salad makes enough for two meals and shouldn't take more than ten minutes to prepare. There's no reason for you to suffer with boring salads or eat unhealthy fast food when you can easily make a diet chicken salad with fresh vegetables.
