Here's a fantastic recipe for roast potatoes with asparagus!
- 2 pounds new potatoes
- 2 fennel bulbs, quartered
- 7 cloves garlic
- 1 pound asparagus
- 1 tsp. olive oil
- 2 tsp. rosemary
- Salt and pepper to taste
Spray some foil with cooking spray, and place the potatoes on it. Place the fennel and asparagus on top, and sprinkle the garlic and rosemary. Drizzle on the olive oil. Cook at 425 degrees for 25 to 30 minutes.
