Here are the ingredients that you will need for perfect shortbread cookies:

1 pound of room temperature, unsalted butter

1 1/4 cup of sugar

3/4 teaspoon pure vanilla extract

4 cups of all purpose flour

1/4 teaspoon salt

Directions:

Using an electric mixer, combine the butter and sugar and beat on low speed until they are well combined. If you don’t have an electric mixer, you can blend the butter and sugar by hand. Once they are well incorporated, add the vanilla extract and the salt to the mixture, stirring well to incorporate. Next, slowly add the flour 1/2 cup at a time. If you find that the dough becomes too stiff for your mixer to handle, switch to kneading the cookie dough by hand until all the flour is incorporated. Bring the dough together into a small ball and then wrap it with plastic wrap. Flatten the ball into a round disk and place it into the refrigerator for 30 minutes to relax and cool.

Meanwhile, preheat an oven to 350 degrees F while the dough is resting.

After the dough has cooled off and rested, lightly flour your work surface and rolling pin. Roll the dough out so that it is 1/2 inches thick. From here, you can use your favorite cookie cutter to cut any shape that you want, or you can cut free form cookies. Use a spatula to carefully lift up each cookie from the work surface and transfer them to an ungreased, metal baking sheet.

Bake the cookies in the preheated oven for 20 -25 minutes until the edges are lightly golden brown. Once the cookies are done, transfer them to a wire rack for cooling.

Decorating:

Your shortbread cookies can now be iced or dipped into chocolate if you desire. Also, if you want to cover them with colored sugar, sprinkle the colored sugar onto the cookies before baking.
