How to Make Easy Sole Meuniere?

Fish is actually a great thing to cook in a pinch, as it doesn't take more than ten minutes to cook up. Sole meuniere is a fancy French fish dish that is sold in many restaurants. Basically, it is sole in a butter and lemon sauce. This is a great base for a sauce and many other flavors can be added to the mix—like capers, white wine, fresh herbs. Cooking can be casual, use what you have!

Ingredients

1/2 cup all-purpose flour

Kosher salt and black pepper

2 fresh sole filets

3 tablespoons unsalted butter

The zest of two lemons (about 2 tablespoons)

The juice of 3-4 freshly squeezed lemons

1 tsp dried parsley

¼ cup white wine (optional)

1 tablespoon capers (optional)

Directions

1. 1.Combine the flour, 2 teaspoons salt, and 1 teaspoon pepper in a large shallow plate. Pat the sole filets dry with paper towels and sprinkle one side with salt.

2. 2. Heat 2 tablespoons of butter in a sauté pan over medium heat until it starts to brown. Dredge 2 sole filets in the seasoned flour on both sides and place them in the hot butter.

3. 3.Lower the heat to medium-low and cook for 2 minutes. Turn carefully with a metal spatula and cook for 2 minutes on the other side.

4. 4.Remove filets and add lemon zest, lemon juice, white wine and capers to the pan. Let sauce simmer for 5 minutes.

5.5. Return filets to the pan, heating through another 2 minutes. Sprinkle with the parsley and serve hot.
