Technically your plane does change time since it is within a different time zone, but the flight crew does NOT change their clocks every time the plane passes over a time line. The flight crew uses "Zulu" time, which is Greenwich Mean Time (Time in London). This is a worldwide standard that never changes.

If your plane flies to a different time zone, I would recommend setting your watch to the new time zone sometime in flight, that way you can easily estimate how much longer the flight is since arrival times are expressed as local time at the arrival airport. Makes things a bit easier.
