What is allowed and not allowed on an airplane?

Anything that isn't a weapon, can't cause damage, and is logical to take with you. If you want to take a cell phone you can, but put your cell phone into airplane mode before take off.
... only that which is absolute necessary on the flight. Rules vary between airlines, ask your airline or check their webpage.

Because they are considered either dangerous or inappropriate. Sharp objects for example, they can be used to hurt/kill someone and in the air this can cause a lot of problems. Other objects, such as phones can disturb the navigation equipment on the airplane which can cause the plane to either fly in the wrong direction or even crash.
