Purely personal picks:

The British S.E. 5a - for it's time period, it was manouverable, speedy and powerful but a bit ungainly to look at.

German Albatros D.1 - helped create German air superiority in WW1

also the Taube - it was graceful to look at, birdlike appearance

French Nieuport 17 - beauty! Many top aces used this aircraft.

Prewar? Well hands down the most graceful looking aeroplane was Hubert Latham's Antoinette Flyer of 1910 - this monoplane looked like a canoe with beautiful bird wings attached. Set numerous records.
