You shouldn't unless you can go wider & keep same sidewall. Don't do anything unless it would improve the handling otherwise you defeat the purpose of having a vette.
The correct tire size is a F70x15, but in todays metric tire sizes I think the 235/70-15 is a perfect fit.

It does not change the actual speed of a vehicle but changing tire size can affect the accuracy of the speedometer.
just go to a tire shop. But the normal rim size is 16 and tire can change size.
