It's not fun, but you need to remove the entire dash and unplug the electrical connections going to it. You need to also unbolt and drop the steering column, and then take the dash completely out. Once it's out, the heater core is easily accessible behind it's panel on the firewall. (Looks like a little radiator.) I would recommend getting a service manual to assist you, or getting pictures online.
Before CHanging the Heater Core, have you tried flushing it? I have a 99' Jimmy and have to do this every year to get my heater to work.

The 1996 GMC half ton pickup truck heater core can be removed by removing the heater core retaining bolts. Remove the heater core water lines. Reverse the process to install the new heater core.

Unfortunately, there is no "easy" way to change the heater core. The entire dash board has to come out. then it's easy. Then you have to put the dash back in. Sorry :(
Yes, both the heater core and evaporator are in the HVAC housing, which has to be removed to access either.
